How to shell a hard boiled egg properly
By Mark Breakspear
One thing I hate is hard boiling an egg, and then take pot luck when shelling it, will it shell easily? Or stick to the white or albumen as it is technically know? and leave me with hardy an egg left. The best way to avoid losing your egg, is to immerse it in cold water as soon as it has finished boiling, this tops the membrane sticking to the white. Then when cold tap the larger end of the egg on something hard or use a spoon. The larger end of the egg has an air pocket that forms when the egg cools down. This will give you a starting point to begin shelling from as it contains a space that is not attached to the white and you rip the membrane. Then gently roll the egg along the table cracking the whole shell lightly. You should now be able to shell the egg perfectly. Enjoy.
